MOSCATO ROSA VIGNETI DELLE DOLOMITI IGP

PRODUCTION AREA
Produced in limited quantities, the grapes are carefully selected from the Donati family vineyards, located on sunny hills of Pomarolo. Moscato Rosa is a typical grape variety from the region

GRAPES

WINEMAKING TECHNIQUE
Grapes are harvested in the fall once they’ve reached peak ripeness. As the grape bunches are very loose their yield is quite low. The bunches are characterized by a high percentage of smaller than common sized grapes, also known as sweet berries. For this reason, they have particularly concentrated aromas, extracts and sugars. The grapes then undergo a natural drying process, and therefore concentration, directly in the vineyard. After harvest the grapes are are lightly pressed and fermentation is done on the grape skins at a controlled temperature. Finally, the wine is aged in steel tanks and then in the bottle for a few more months
