AREA OF PRODUCTION
From grapes of the vineyards cultivated on the hill which overhangs the Borgo di Marco in Rovereto in Trentino. Here a series of petrified dinosaur’s prints have been discovered which date back to the Jurassic era. On this very hill and on a land with such a complex genesis our SYRAH sinks its roots.
The most reasonable assumption about the origins of this variety is the one that implies its provenance from the Middle East, in particular form the city of Syraz in Persia. Widespread in France in the Rhone valley and in some neighbouring areas like Chäteauneufdu-Pape and Ermitage, it reached Italy around the middle of 1800.
Traditional maceration of the skins, temperature-controlled fermentation with pressings in stainless steel tanks, developed in barriques
